Actully.... Raccoon is dark meat..........and not to gamey..... But you cook it just like Chicken.......

mmm raccoon stew is tasty! Even better after they've been fattened up feeding on your garbage I bet. :)

Around here, everyone locks up thiere garbage so the raccoons can't get it..... so they live off cat ond dog food ....... (or the heels of bread that I feed them to fatten them up........) B)

Puts out a plate for Chloe..

Sliced thin, breaded lightly with little milk one egg and my own mix of seasoning (I like it a bit hot) crisped in the oven in a tiny bit of Extra Virgin Olive Oil. Serve with good tomato sauce for dipping. I like it plain but of course I'll make some with cheese for those non eggplant purists. I could live on eggplant at times..

Gotta press it first . between heavy plates and paper towel with a little sea salt to take out the bitterness..

That's the same way I cook eggplant! I've served it to folks who said they don't like eggplant and they love it this way.

And pressing it is a must! Some friends used a colander and salt, but that doesn't work as well and makes them too salty. I've since converted them. Gotta use paper towels to carry the moisture and salt away.

With the arrival of Spring, my chickens have kicked into overdrive. I'm cooking something with eggs! ;) Probably a big egg scramble, with tomato, onion, cheese, and hot-pepper flakes. Yum!
