I'm going to christen these little breakfast islands "Eggs Defoe" ... in honour of Robinson Crusoe author Daniel Defoe, who made an early documented reference to Stilton cheese in 1727 (although predated by Stukely in 1722):

Kedgeree ... a traditional British breakfast dish from the days of the Indian Raj ... combining rice, eggs, and fish.

Here's the basic recipe:

Kedgeree

My own version this morning was a bit of a riff on the same theme. I sauteed some chopped leeks in butter in a large frying pan, then added 2 eggs to the pan and scrambled them, added 1 cup of cooked leftover couscous instead of rice, and one curried tilapia fillet (leftover from supper), flaked into pieces. I stirred it all until well mixed and heated through, then seasoned with fresh ground black pepper.

As an accompaniment, I had a bowl of fresh pineapple chunks.

To drink: mango juice, and a cup of strong black tea

Kedgeree is very versatile and can be eaten at any time of day. [it's absolutely the perfect brunch food!] And the variations are endless, as these recipes attest:

Mackerel Kedgeree

Salmon Kedgeree

Smoked Tuna Kedgeree

Riverside Kedgeree

Kipper Kedgeree

Handfuls of vitamin C pills, because my dance instructor last night had a wicked cold!

Glad I remembered to take the hand-sanitizer with me to class.

Cheers, Hester ... who's wondering when the flu-shot clinics start up!

Toasted cheese and pickle sandwich with Branston pickle. :)

I love cheese & Branston pickle sandwiches! I usually make them as little tea sandwiches, cold -- but now, I'm going to have to try toasting them! (Ever read the list of ingredients? Rutabagas & dates! -- Now there's a condiment combination only the British could invent!]

Anyhow, the last thing I ate was Afternoon Tea at a discreet little 'bijou' hotel hidden away on a side street in the tonier part of downtown.

On the menu:

Assorted tea sandwiches:

Smoked Salmon & caviar

Chicken & tomato

Asperagus & leek

[All rolled like sushi]

Miniature quiches with carmelized onion

Scones with clotted cream and jam

Assorted miniature sweet pastries

Strawberries with whipped cream

Cheers, Hester
