Important thing is to press the bitterness out with salt sparingly sprinkled on and layer the slices between paper towel and plates. Upside down dinner plates work well. Hmmm ya know? Maybe I'll post a class on it with pics. I could live on eggplant. Woah as a matter of fact, lunch today was chinese eggplant in garlic sauce. mmmmm The dogie crunches the fortune cookies...so cute the little crunchy noises. Have cookbooks. Like the cooking channel.
