William Brand Posted February 23, 2008 Author Share Posted February 23, 2008 I can recommend them all, but in small doses spread out over a week, but tonight I recommend the Cabernet Sauvignon. An elegant wine that relies primarily on the berry and cassis fruit characteristics of grapes which are enhanced by some sweet vanillin from American oak. A soft round palate makes this wine attractive for early drinking but with ample tannins to provide some cellaring potential. The balance of structure and fruit provides great flexibility with foods.
