I had a nice, brisk walk to the bus stop this morning; 7°, with a wind chill of -9°. Bleh.

Come to Virginia Gents! Currently sweatshirt weather...IF that even... :lol:

Calling for snow and ice hereabouts -- and us Texicans don't know how to drive in that stuff. Good thing I made that two gallons of gumbo yesterday...

LOL!!!! He's not whistling Dixie on that one. :lol: Most have a hard time driving in the rain down here. As soon as they even hint at ice or the white stuff, there is generally a raid on the grocery stores like it's going to be an all force White Out. It can be amusing to watch, but then I am a transplant from near Canada. :P No reflection on their character, good folk on the over all, but Texans and Winter Weather do not mix. :P

Currently 29 degrees with a windchill of 18, quite wet and more to come. (If it were about 20 degrees lower, it would feel like home. LOL!)

OOOOOO!!! Gumbo!!!! Packing the truck as I "Speak".....Hey Zeph! I'll bring the wine and bread!!

LOL!! Mahaps you can get Zeph to send you a care package. :P Although, the idea of it gives me the inspiration to make "The Soup of Life" myself. And perhaps some sweet cornbread....Call it a salute to my "displaced kindred" a couple states over. :lol:

It's getting a tad cooler here and someone in the office keeps turning down the thermostat in the afternoons so it's freezing in the morning. I just bought a space heater and it's on full blast, although I'm still wearing my jacket and scarf. Brrrr!

So tonight dinner's a big batch of risotto and crusty french bread (comfort food.)

May need a wee bit of advice on that aforementioned gumbo.

Actually, Wednesday, it was gumbo. Yesterday it was... um... is congealed the right word...? Still right tasty (though could be a bit more spicy for me) but it turned very, very stew-like, rather than being that more liquid consistency that I generally think of with gumbo.

Too much or too thick rue, perhaps...?

What did you use for the roux? Did you do it from scratch or use a premade foundation? (Zatarain's, perhaps?) To be absolutly honest, I have had it gravy-like and thin. There is a place up in Denton that is owned by folk who come from the Source, their roux tends to lean towards the thick side. ( But not as heavy as most gravys.)

If you do not wish to go through the time that is takes to build a proper roux, boiling fish down and using file' , I might suggest looking into using Tony Chachere's version. You can rarely go wrong with the products he offers.

Not spicy enough? Meaning "heat" or flavor? :unsure:

Jimmy Buffett said that Gumbo is ..."a little like religion and a lot like sex." If its' done right, truer words could never be spoken. :P

LET IT SNOW!!! We are expected to get 3 to 6 inches by the end of the today. Coming to work this morning was fun...lots of people have obviously forgotten how to drive in this stuff. I counted 7 cars and one buckboard off the side of the road. :unsure:

If you're in the Midwest band of this stuff....be safe! Oh, and stay warm!

Sunny, after three days of rain, and light snow. But it's cold - down in the 20's at night, and maybe 40 during the day. Sun isn't going to last, as rain is forcast again, but it's nice to get that little break! :lol:
