I'm not an expert at all, but while researching food for a pirate theme party, I read that pirates ate a lot of Solomon Grundy (is that the name they used for turtle soup?) while on ship, as well as hard tack - those nasty cracker bread things. Needless to say, I didn't go that route for the buffet. :D Boucaniers seemed to have grilled copious amounts of boar and cattle that had been released on various Caribbean Islands. Hell that sounds like a good time, grilling and large amounts of grog.

Hope i helped a little...

This Discussion Thread is although rather long, has tons of great information (mostly thanks to Dutch, Mission, and Iron Jon)... Definately worth checking out.

Dampier's Coconut has some interestign tidbits as well.
